Autumn recipe........

I tried a new meatloaf recipe this fall adapted from a Betty Crocker recipe and it was YUMMY! I have had a few people request the recipe so I thought I would post it. Here it is and enjoy!

Mini Meatloaves

1/2cup ketchup
2tablespoons packed brown sugar
1lb ground turkey breast


1/2cup Heart Smart Bisquick® mix
1/4teaspoon pepper
1small onion, finely chopped (1/4 cup)
1egg or 1/4 cup of egg whites

Dash of garlic and onion powder
Dash of No salt All purpose seasoning


Total Time: 35 min
1.Heat oven to 450°F.
In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
2.Spray 13x9-inch pan with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.

Bake 18 to 20 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160°F

Fall Update!

Hey everyone! Fall is here and I have been so busy. Sorry to leave you all hanging for awhile. I have lots of pictures to post too - I will get to it soon. The squash is picked and pumpkins are carved (from our gardens). I planted spaghetti squash and pumpkins this year in 2 different areas. But..the bees got busy and cross pollinated a few. I had a couple of pumpkins, a a couple of spaghetti squash and a few that were spaghetti/pumpkin squash!

I now have my fall plants growing well: golden beets (which I have never grown so we will see), carrots, corn salad, red lettuce and salad mix. my mint has come back too for some reason! Oh and I planted 1 red potato in the spring and yielded about 50 of all shapes and sizes!

Haven't posted in a bit....

Hi all,

I haven't posted in a little while. I will put up some pix soon. Tonight I made a vegan chocolate cake with some flowers and coconut on it for my friend's birthday. I need to work on piping flowers - not easy. Also, I need to practice writing on cakes.
On the gardening front - still waiting for my sunflowers to open and all my green (lots) tomatoes to ripen. Hope we have some more sun and warmth to encourage them!
I planted corn salad, carrots, golden beets, salad mix and red lettuce back in August for the fall. Looks good! YUM!
We also have a good amount of plums from our neighbor's plum tree that hangs on our side some. Made plum crisp the other night - Nummy!

Ice Cream Cake Cupcake (August 2009)

I made ice cream cake cupcakes for Riley's 5th birthday along with his wolverine cake. This way i could make ice cream cake of different flavors. They all had a chocolate cake base and a chocolate ganache topping. This one had coconut ice cream.

Starbuck's Coffee Cup Cake for Jerilyn's 40th Birthday


Here is a "40 oz." Starbuck's coffe cup cake that I made for Jerilyn's "40th" birthday. (August 2009) I even put a "lipstick" mark on the top of the cup. It was a fun cake and the first time I made and used fondant.

Sunflower Cupcakes and Pumpkins



These are sunflower cupcakes I made in April 2008 for Sophie's 7th birthday at her school and for her teacher who shared the same birthday. The picture isn't very good - I took it with my phone. Can't see it but there are little ladybugs in the center area of the sunflower.


Below is me and my first pumpkins I have grown in Oct. 2008.

Haley starting her cake decorating career when she was just a little one! Guessing she was about 3ish.

Shower cupcakes (Februaryish 2009)

I made these "baby rattle" cupcakes for my friend Felicia's baby shower. We were welcoming Gemma Rayne who was coming in March.

Fishbowl Cake and Cupcakes (April 2009)

Here are fish bowl cupcakes I made for Haley's birthday and a Fishbowl cake that I made for a dessert auction at Haley's school. Haley loved the cake so much (she followed it around and even snuck nerds off the cake) that I made the cupcake version for her birthday.

Made these flower cupcakes to welcome Charlie and it worked - she arrived just days later! Must have been the chocolate and yummy sweet frosting! :)

Shower Cake for Mrs. Brown (June 2009)


This is a shower cake I made for Haley's teacher Mrs. Brown. She is expecting her first child in September. It was my first sheet cake and I had a great time making the baby booties!

Potato Flower 2009


This is a beautiful flower from my red potato plant. Can't wait to see how many potatoes I get! Sometime in September I am guessing.

Raceway cake made for Hunter's (our friend) 6th birthday. (July 2009)

First harvest of the 2009 season (early July/ late June)



This is the first harvest of 2009 - I think around late June/early July. We picked swiss chard (not shown), yellow and green zucchini squash, strawberries, tomatoes, herbs, purple and regular carrots (the purple ones are good!), onions (small but yummy) and lemon and regular cucumbers.

This is the sunflower garden Haley and I planted a couple of years ago. Fun. They grew best in that spot - haven't had as much luck since in other spots.
